Cake of the week..

Last week I made these chocolate chip and raspberry cupcakes

I made them at my mom's house so I didn't have all my usual stuff

but they turned out okay, I'm still working on the frosting part

pink raspberry frosting and freeze dried raspberries on top

and just a single raspberry

I'm trying to find the right recipe for a good cream cheese frosting,

still a work in progress

Mini vacation in Hirtshals..

My sister and her boyfriend invited us along on a summer get-away to Hirtshals

four days of food and wind and a lot of drinks!

waiting for the plane at 7:00 in the morning

that means starbucks!

getting picked up from the airport in style

cold corona with a lemon slice in the car

the house was so awesome and pretty

and! right at the beach!

my sister had brunch ready for us

all the plates in the house looked like this!

so awesome I wanted to bring them all home with me!

and drinks

more drinks in the sun

that's almost all we did

I picked some wild flowers for my boy <3

and we had fresh salmon for dinner

soooo gooooood

such a bad photo, but it looked surreal!

and then we went back to being drunk

in need of a good breakfast!

 and a last look at the view before going home

Cake of the week..

This cake is actually from a couple of weeks ago

a lot of summer, vacation and work got in the way of my blogging and cake making

But! I'm here now. And i made this awesome cheesecake!

I baked the crust first and put chocolate chips on top

the filling was creme cheese, raspberry swirl and chocolate chips

it wasn't as pretty after I baked it

the chocolate chips kinda dried out instead of melting :( 

but as always it tasted great! and it was gone pretty fast :) 

New Ink..

Last thursday I got some new awesome ink at Bright side tattoo in Copenhagen

I always pack a lot of snacks when I get tattooed

stensil on! ready to get my awesome otter

lines and shadows done

all done and tired

Cake of the week..

This week I made chocolate chip and mint frosting cupcakes 

or After Eight cupcakes

lots of chocolate chips! both light and dark

hot out the oven with melting chocolate chips! 

and the whole batch

now with mint frosting

I never tried frosting cupcakes before so it didn't turn out great

but at least I learned from it :) and it still tasted great! 

an example of an okay frosting attempt! 

I'll do better next time! 

Cake of the week..

This weeks cake was a request from my boy

he loves swiss rolls so I made a huge one for him

first try went very wrong :( 

but second time all was well

I also added some blended strawberries on the second try, and the cake ended up purple

I filled it with strawberry/vanilla filling 

and a lot of it!

now as a roll

and with pink icing to match the strawberries

it turned out a little flat but I think that was because of the fluffy filling 

and on the plate! 

it tasted great! but even better the day after when the cream had set a little

Mini vacation..

Last thursday was my mom's B-Day

we had planned to stay at her house until friday but ended up staying until monday morning

It was such a great long weekend! we had a lot of fun and I got to relax!

we do a lot of hanging out in the garden 

and a lot of eating!! 

then it started raining like crazy, and the boys went out in the rain

we had strawberries from the garden for breakfast

and later we went to Tegners museum 

there is an awesome sculpture garden

plus it's filled with sheep!! so awesome

Or cakes of the week this week

I started this new project at home

I really like to bake but I almost never have an excuse to do it, 

so now I bake a cake each week.

Tuesday it was my boy's B-day, so I made this layer cake

I filled it with berries and bananas, and the layers were chocolate 

decorated the cake with Oreo's and stars

And then I actually started the "cake of the week" thing

and made this:

the cake was a raspberry and lemon cake

I cut it into two layers and filled it with Oreo creme cheese filling

super easy, just blended Oreo's and creme cheese

I put some filling on top as well

and then topped it of with chocolate fudge and chocolate chips

it turned out really good, but I might make some changes if I ever bake it again.
